“The George Hotel has always been more than a business - it’s an institution at the heart of Inveraray, and that brings a real sense of responsibility with it,” said Sam. “The Maclachlan family’s roots here go back generations, so this was never about turning the George Hotel into something generic or ‘corporate’. Above all, we’re passionate about keeping that authentic, non-chain pub spirit alive - the warmth, the personality, the sense that this is your local as much as it is a destination for visitors.”
According to Sam, the new ethos is simple: protect what makes the George Hotel special, up the food game and strengthen its role in the community even more.
“That means keeping local people in local jobs, backing the team who have helped build its reputation over many years and making sure decisions are made with Inveraray in mind,” Sam shared. “We actively support local organisations, events and charities, and we will work hard to collaborate with neighbouring businesses rather than compete with them.”
The last thing Sam and Charlie wanted to do was reinvent The George Hotel for the sake of change. So their approach has been evolution, not revolution.
“Guests recognise familiar faces, and that continuity is part of what makes the George Hotel feel like home,” Sam said. “We’ve kept the elements people expect - the buzz of the bars, live music, a relaxed, but special, atmosphere - while quietly raising standards behind the scenes.”

“We’re building on the George’s strong reputation with a more confident, seasonal menu that champions quality Scottish produce, alongside regular specials, events and themed nights,” said Sam. “We work closely with suppliers, adapt menus to what’s at its best and let the ingredients lead the dish rather than forcing things in from afar. Great quality product cooked simply. That close relationship with suppliers gives us better quality, more flexibility and a real sense of place on the plate. Guests can taste the difference, and it reinforces that the George Hotel is rooted firmly in its surroundings.”
