A Love Story at the Core
The Silly Goose at The Lime Tree is the creation of Kylie and David Hickman a creative, passionate husband-and-wife team who work side by side every day.
Kylie is Fort William born and bred. David has lived in Lochaber since the age of 11. He trained in French cookery at the Ashburton Chef’s Academy, led by top Parisian Chefs and from here, developed a deep respect for classical technique, precision and the discipline of traditional French kitchens. Their story, from meeting at West Highland College, building a life together and creating a restaurant that reflects both their personalities, is woven through every part of the business.
They are very different and completely complementary.
Kylie brings the Fort William roots, the grounding in community and a clear vision for what Fort William deserves and desserts to die for. David brings refined technique, experience and an uncompromising commitment to quality. Together, they are a hugely creative force, constantly refining, researching and evolving
their menu.
This is not a restaurant run by committee. It’s driven by two people who care deeply about every detail from their choice of suppliers to the presentation on the plate – and they have a formidable front of house team that brings the joy to the table!

A Sweet Addition this Spring
This spring, alongside the launch of a new seasonal menu, The Silly Goose at The Lime Tree is introducing waffles, cakes and sweet treats in the late morning and afternoon.
It’s a lovely extension of their offering - perfect for relaxed meetups, indulgent pit-stops or simply experiencing a little slice of Frenchinspired baking in the Highlands. Bookings are managed through DishCult and ResDiary, and with growing demand, reserving ahead is highly recommended.

Dinner in the Highlands
A real culinary highlight in Fort William! We deliberately don’t post pictures of the food here – you just have to experience it yourself. If you really want to eat well, don’t miss this place. We are quite spoiled when it comes to good food, and the surprise was all the more beautiful: An excellent menu, excellently prepared and served with great attention to detail. The young team on site delighted us with attentive and very friendly. Service – uncomplicated, warm and at the same time highly professional. It’s also noteworthy that the venue has already participated in Scottish competitions for the best cuisine. In my opinion, a star would be absolutely deserved – if not now, then surely in the near future. Get close! A huge compliment to the entire team for this unforgettable evening.
